De dochter van actrice Jayne Mansfield en acteur / bodybuilder Mickey Hargitay, Hargitay is een voormalige schoonheidskoningin die haar filmdebuut maakte in de horror-komediefilm uit 1985, en haar grote televisiedebuut in de Downtown Adventure-dramaserie 1986. Ze verscheen in talloze rollen in film- en televisieshows gedurende de late jaren 1980 en 1990 voordat ze werd gecast als Olivia Benson, een rol die leidde tot haar oprichting van de Joyful Heart Foundation, die ondersteuning biedt aan vrouwen die seksueel zijn misbruikt.
